No matter the occasion, when we come together with our people to celebrate, share good news or support each other through disappointment and grief, food is the first thing we think of to show our support, and thusly becomes heavily intertwined in our memories, good and bad. Cooking for someone is one of the purest forms of love, and a thoughtful, non-verbal way to show affection and dedication to the people you cherish. If you’ve ever been on the receiving end of someone’s cooking during a time when you needed extra comfort and care, you know just how appreciated it really is.

In celebration of Valentines Day we wanted to share some of the go-to recipes we make for our favourite people, in good times and bad. Happy baking!

One Bowl Vegan Chocolate Cake: “I make this chocolate cake—in part because I’ve made it since I was a child and it’s so easy, and because eating chocolate cake makes you feel special!” – Sophie

Molasses Baked Beans: “It’s total comfort food!”. Our resident East Coaster, Kelly Neil, makes this cozy pot of baked beans when someone she loves needs a little pick-me-up.

Vegan Cinnamon Cardamom Buns: “I make cinnamon buns for people if they’re not feeling well, or for any kind of care-package idea. Everyone loves cinnamon buns. I also make these if I’m anxious or depressed as the whole process of bread making, kneading, twisting, etc. is time consuming and calming.” – Alexandra

Gluten Free Waffles -The Simple GreenEasy Gluten Free Blender Waffles: Waking up to fresh waffles is a sure fire sign that someone loves you. These blender waffles come together quickly, and as Heidi says, “Who doesn’t love waffles?!”.

Skillet Vegan Cornbread with Herby Jalapeno Butter: Ashley likes to pair this fragrant cornbread with grilled meat/veg, or on its own warm from the oven with softened butter and a little bit of honey. If you’re making it for someone special, pack it in a basket with a jar of soup or some preserves so it makes an easy  meal.

Pumpkin Millet Sandwich Bread (vegan)No Knead Pumpkin Millet Bread: A loaf of fresh bread turns almost anything into a meal which is really nice when you’re tied up in life and don’t feel up to cooking. Kris recommends slathering this pumpkin millet bread with ricotta cheese, a drizzle of honey, and a sprinkling of sea salt when it’s still warm from the oven.

Thick & Chewy Oatmeal Coconut Dark Chocolate Cookies: “I’m more of a cook than a baker, so if I’m baking for you then I must really love you! These cookies are my go-to care-package cookies since they’re full of feel-good ingredients but have enough sweetness and chocolate to feel like a treat!” – Kelly

Cranberry Persimmon Crisp [vegan]

Old man winter is likely a constant by your side these days! Sadly, selections for fruit and vegetables are not as abundant as they are in spring and summer. However, despite it’s cold and heartless demeanour, winter has some very unique and tasty fruits to bear…

Have you ever had a persimmon? Don’t let their tomato-like appearance and texture turn you away, they’re a lovely sweet seasonal fruit. And for today’s recipe, I’ve turned ripe Hachiya persimmons and tart cranberries into this simple fruit crisp. The crisp topping is made from a base of spelt flour and rolled oats – it’s high in fiber and has a lovely nutty flavour to it. Persimmons and cranberries and definitely the ‘it’ fruits this season, and they pair beautifully with a hint of orange and cinnamon in this comforting dessert. …

Pretzel & Chocolate Chip Cookie Dough Ice Cream Sandwiches

June 28, 2018 by Kelly Brisson // the gouda life Leave a Comment

Pretzel & Chocolate Chip Cookie Dough Ice Cream SandwichesContinuing right along in our quest for no bake desserts and treats that help you keep your chill in ridiculous summer heatwaves… these Pretzel & Chocolate Chip Cookie Dough Ice Cream Sandwiches are going to be your new summer favourite for sunny day snacking, and a quick throw together option with pretty minimal prep work for dessert post barbecue dinner.

The buttery cookie dough, with it’s salty, crunchy, chocolaty bits strewn throughout, is smooshed down around my favourite tangy lemon ice cream, hugging it into submission and creating optimal mouth happiness. They are the type of ice cream sandwich that brings you back to childhood. Because the dough is raw (but egg-free, don’t fret), it doesn’t harden like a typical baked cookie would, meaning when you bite down into your ice cream sandwich, the ice cream isn’t going to ooze out the sides as you try your damnedest to bite through that hard cookie shell – you know what I’m talking about. The texture of the ice cream and the cookie dough are both soft and easy to bite into, making for the perfect bite every time….

Plum and cardamom crumble bars

October 15, 2017 by Alanna Lipson 2 Comments

Plum and cardamom crumble bars
Hellooooooo, Party Week people! I’m thrilled to be joining this all-star cast of contributors to BAKED (as a longtime fan, myself), and look forward to getting to know this community even better. With that in mind, I chose to make a dessert with one of my favourite late summer/early fall ingredients: Italian-style plums (also called blue plums, or prune plums). They’re mouthwateringly tart and packed with flavour, plus they cook down into a beautiful jammy filling.

These plum and cardamom crumble bars come together in no time, since the base and the crumb topping are all one mixture, and (as an added bonus) there’s no par-baking required for the base. The hardest part is letting them cool completely in order to get a clean slice, but if you were really pressed for time, you could just scoop the mixture out into bowls while it was still warm and serve it with vanilla ice cream, like a standard crumble but with bonus crispy bits–and who doesn’t love bonus crispy bits?…
